You either learn the boss patterns or you're stuck permanently. Enemies have very wide hitboxes to make dodging not viable and funnel you into the parry playstyle.
Will there be Sekiro 2 : I hate to disappoint you. It is very very unlikely that there will be a sequel to Sekiro. Miyazaki, the guy who came up with the concept of Sekiro and then in charge of the whole thing, is not into sequel anymore after finishing the Dark Soul series.
